It all began in northern France, where Benedictine monks toiled away for generations, in both vineyard and cellar, to create the sparkling elixir we all love today. 

Originally considered a flaw, this recipe has now travelled far beyond the Abby’s of Champagne to produce sparklers of quality and value all over the world. In this tasting, we dive into the world of sparkling wine, its different production methodologies and expressions. Join me this December for a very special tasting on the wonderful world of sparkling wine! In this fun class, participants will travel to Spain, Italy, Germany and France to discover some truly wild and interesting sparklers. We will chart the course from still wine to the finished product, all while learning the history of sparkling wine and its major players

Series Description:

Wine is made to be enjoyed by everyone, and the joy of learning about this wonderful beverage is best experienced among like-minded individuals in common pursuit of a greater understanding. Join Certified Sommelier Paul Robinson for a series of practical wine tastings on wine regions throughout the world, to take place at Farmstead Wine & Cheese in Montclair. These will be fun 60-90min tastings where Paul shines a light on the history, geography, cuisine and culture of winemaking, all to give context for the experience in the glass!

Sommelier Instructor

Paul Robinson has been in the hospitality business for almost 20 years. His career began in the private event business in NYC, working for a French fashion photography house and the acclaimed restauranteur Danny Meyer. After a meaningful trip to Italy, Paul pursued certification as a sommelier through the Court of Master Sommeliers. He then moved into restaurants full-time, first by leading a wine/cheese program at Chiaroscuro in SF, then at 2 Michelin star Del Posto in NYC. After restaurants, a chance encounter would lead Paul to a new career: immersive educational tastings on regions and appellations all over the world. He has spent the last 3 years running Bottivino, a retail and events business devoted to Italian wine. Paul is a certified sommelier through the Court of Master Sommeliers and a member of the ruling council of the Cavalieri del Tartufo e Dei Vini di Alba - SF Bay Area chapter.
