The charming side to Champagne rose awaits in the glass with Henri Billiot. While some winemakers seek sharp edges or a more muscular expression to their rose, Billiot goes for ripeness and roundness. Laetitia Billiot employs the Saignée method of bleeding the grape must and partial wood during the aging process, leading to a much riper bubbly with soft edges and the ability to soak up protein. Basically, they are easy, juicy and fun to drink! The Billiot’s have been making wine for over 4 generations in the Montagne de Reims. Today, winemaker Laetitia manages 5 hectar of vines almost exclusively in Ambonnay, a grand cru vineyard known for producing Pinot of gargantuan strength. It is a testament to her skill that Billiot wines tame Ambonnay fruit into such an accessible experience.
