While not as ubiquitous than Sangiovese, Nebbiolo is just as prolific in range and expression. Grown almost entirely in the northwest of Italy, Nebbiolo is the single defining grape of Barolo and Barbaresco wines, among many others. Its capacity to take on the characteristics of place, provided the winemaker gets out of the way, is a thing of beauty. It is difficult in the vineyard and resists a heavy hand in the winery. When done right, Nebbiolo can sing beautifully hours after being opened, often days. Some are produced for immediate consumption; others need time to evolve, yet the very best somehow do both! Here are two producers who straddle the line between weight and freshness: Francesco Versio in Barbaresco and Alberto Burzi in Barolo. Both farm organically and age in large casks known locally as Botti. Track them in the glass over an hour, afternoon and next day, and marvel at the evolution.
