A textured and juicy sparkler from 100% Pecorino grapes in Le Marche of central Italy. There is a farmhouse feel to this wine, showing ripe stone and citrus lifted by warm spice and earth, yum! A great Thanksgiving wine.

Cossignani is a diamond in the ruff, producing organic wines using the Champagne method, called Metodo Classico in Italy. Brother and sister team Edoardo and Letizia created this passion project in 2015 with the sole intention of bringing the skills of Champagne to the rolling hills of Le Marche. The vineyards are near their home in Massignano and sit on a deposit of limestone, a key ingredient in great sparkling wines. This extra brut sparkling Pecorino is aged in a mix of concrete, barrique and larger cask during after the first fermentation.
